This weekend your favorite professional non-chef college grads trying to "adult," Joey and I, made our favorite crock pot dinner: fajitas! And the best part of all, EVERYTHING you need is from Aldi! WOOOO!
Seriously, it's SO GOOD.
This is the recipe we loosely based ours on:

You need:
fajita meat
fajita wraps
fresh lemons and limes (2-3 of each)
salt, pepper, chili powder
minced garlic
1 yellow onion
1 green pepper
head of lettuce
tomato 3 pack
sour cream
mexican shredded cheese
jalepeno peppers (for joey)
Using the steak meat package from Aldi that says "great for fajitas"... we are so creative right?... throw this right into the crock pot (make sure it's thawed).
Next, we add fresh lemon and lime juice (1 each) and rub in some salt, pepper, chili powder and minced garlic (half a teaspoon) onto the meat.
We let this sit for 3 hours - - during this time check on it to make sure the meat is separated nicely and evenly in the crock pot. The package it comes in kinda rolls the meat slices into one big ball.
After three hours, throw in some green pepper and yellow onion slices (or chopped, depending how you like your fajitas). Squeeze in another lime here. Let this sit for 2 hours.
In the meantime, wash and cut up your lettuce and tomato. Get your sour cream and cheese out and crisp up the fajita wraps for 5 min or so in the oven at 350.
When your meat is done, rip it up a bit in the crock-pot (you might need to take it out and cut it up on a cutting board).
You're done! Throw all of this goodness into a fajita wrap and enjoy. Joey and I usually make this with rice and he adds in jalapeno peppers on everything (ew).
Disclaimer: this is SO DELICIOUS if you add a decent amount of Chili powder. Sadly, with my weak stomach I need to keep the chili powder to about 1/4 a teaspoon but it's still great. Also, the more lime and lemon, the better.
